First off you can tell right from the introduction that this book was written by someone who is passionate about cooking and knows their way around a kitchen. If you are the kind of person who likes to use a can opener to make your soup, this book is not for you.
The basis of a good soup is the stock and the author tells you how to make 6 different stocks. I started off with the Basic Chicken Stock and I have to tell you, you can curl up with a good book and a cup of this broth and...Mmmm, Mmmm good! Oops, sorry Campbell. It's well worth the small investment in time to make the stock from scratch. I made the chicken noodle soup but substituted rice noodles for the wheat noodles because my daughter is on a gluten free diet. It was delicious!
The reason I gave it 4 stars is because I've only made 2 of the soups so far. My family will be staying at my house over the holidays. I plan on making the Beef Short Rib Stew and the Butternut Squash Puree ahead of time so I won't have to cook while they are visiting from California. I will let you know how the other soups turn out.
