Found the perfect size spatula
I prefer my eggs to have the whites fully cooked (without being overcooked) while the yokes are still runny. This pan does this perfectly! I just dab a bit of butter on the warm pan (maybe 1/8 tsp?) which I smear around using a spatula. I let the eggs cook most of the way on the first side and then flip them over to make sure the whites are cooked on top. That's all there is to it! Clean up is a breeze with just a quick wipe of a dry paper towel. I throw the pan into the dishwasher every so often to make sure the pan is sterilized.
I also found the perfect spatula to fit this little pan. It's the OXO Good Grips Silicone Cookie Spatula. See the picture of how well it fits. I can easily flip two fried eggs using this spatula. Plus, the spatula is silicone so it doesn't scratch the pan and is very easy to clean.
I originally bought this pan just for fun, but it's turned out to be my favorite pan for cooking fried eggs. While it's supposed to be for just one egg, I think it does even better with two eggs. I very highly recommend getting one of these little gems!
I often like to cook eggs covered, but the One Egg Wonder is an unusual size. Happily, there is a transatlantic solution: Judge Vista Lid 12cm
(Is it a little odd to pay under five bucks for a pan and then $13 for a lid? Yes. Yes, it is a little odd.)
The 4" diameter pan at bottom (4.7" at top, 1.1" deep), is the perfect size for a single egg (3-4 teaspoons of egg beaters) to spread out to the pan's edges while retaining it's overall round shape and having some thickness. You therefore you don't need to pre-heat the pan to a high heat to keep the egg from spreading too thin or having an odd shape as you do with a typical 7-8" pan. This results in a much softer egg - more like a poached egg than a typical fried egg. Cleanup is really simple.
The key is to only use it on a smaller burner, and to not let it get too hot. I suspect that people having problems with sticking or smells or pan failure may have either put it on a burner that is too large (so the heat directly hits the handle) or are letting the pan get too hot as they might with a larger pan (you don't need much more than boiling temperature at 212 degrees F, and it's only rated to 350 degrees F), or both.
As noted by others, you do need a specially small non-stick spatula or spoon for getting the eggs out.
