I am a vegetarian who recently found out that I'm allergic to wheat, yeast, eggs and cheese. My doctor wanted me to go on The Paleo Diet, but I have no intentions of eating meat. This book was cheap. It's accessible as it went straight to my Kindle. It easy to read and easy to use and let's just say, I'm not known for my cooking!

Even though I'm not a vegetarian I found the recipes in this cookbook to be interesting and I would definitely use many of them. The first one that caught my eye was the Portobello & Eggs. I love both those ingredients so I knew I'd like this dish. And I was right, I did like it. I made it for breakfast this morning and it was excellent.

I plan to try the Apple and Nut Salad later today but I will substitute pecans for the walnuts as I love pecans and only tolerate walnuts. I think the flavor will be similar. And on a hot summer day I know we'd love the Chilled Cucumber Soup. Just the name conjures up freshness so I'm sure the actual soup will send our taste buds into overdrive.

And in the dessert category I will try the Stuffed Apples. What a great idea to stuff apples with raisins. Sounds delicious.

Overall I'd say that this cookbook has many recipes that I think would be well worth trying and probably coming back to again and again.

A friend recommended this book to me. I'm not vegetarian or vegan but I am trying to reduce the amount of meat in my diet. So among the many cookbooks I buy many are vegetarian. There are many recipes in this book that will appeal to the non-vegetarian. I liked the soups in particular ~ especially for the winter. The breakfast options also look good.

Although I don't eat a paleo diet, I do eat primarily vegetarian and am always looking for more recipes. I've already bookmarked several recipes from this cookbook to try including the fruit & nut cereal bowl and the portobello steak & sweet potato fries. And then for dessert, the strawberry banana cream pie looks delicious! Thanks for some more great recipes to add to my vegetarian arsenal!
