When it comes to flavoring, professional bakers almost exclusively use emulsions over alcohol-based extracts. The flavors are more robust and won't bake out when exposed to heat. I absolutely LOVE this flavoring. You can't go wrong with LorAnn Oils Emulsions, and this is definitely one I will be continuing to order. It made my already pretty good cake TO DIE FOR. I have also used it in cookies and everybody that has tried them wants my secret recipe. I used it with a red velvet cake mix when I was too lazy to bake from scratch and it made it taste like it was from scratch. I also used it in a red velvet cheese ball...using cream cheese, red velvet cake mix (yes just the dry mix), some LorAnn Vanilla and this...oh my goodness it was delicious!

Red Velvet Cheese Ball Recipe:
8 ounces cream cheese, at room temperature
½ cup butter, at room temperature
1½ cups red velvet cake mix, dry
½ cup powdered sugar
2 tablespoons brown sugar
½ cup mini chocolate chips
assorted cookies and crackers (my favorite was Vanilla Wafers)
In the bowl of a stand mixer, beat the cream cheese and butter until smooth. Add in the red velvet cake mix, the powdered sugar and the brown sugar. Beat until smooth and combined.
Turn the mixture out onto a piece of plastic wrap. Wrap up into a ball and refrigerate for at least 2 hours.
Put the chocolate chips on a plate or in a shallow dish. Remove the cheese ball from the refrigerator and unwrap. Roll in the chocolate chips. (This might get messy!) Place on a serving plate and serve with cookies or graham crackers.

I used this in a King Arthur Flour recipe for gluten free red velvet cupcakes. They turned out amazing. You do have to be careful about how much you add, though. You only need a little bit -- adding too much will result in a cough-syrup like concentrated flavor, rather than a light citrus flavor. I plan to use this again in the future, when I make gluten free red velvet cake or cupcakes.

I used this emulsion to make cut-out Red Velvet Cookies for a holiday get together as many of my friends love Red Velvet Cake. Everyone loved them so much they took to-go bags when the get together was over!
